Thank you for your news this week. Please let me know about your special occasions. Also, please pray for those confined to their homes, hospitals or nursing homes, and for those families who have had babies or little children who have been abused or have had life snuffed out of them at the hands of family members. We have heard so much about these tragedies during the past week.

    SEAFOOD CASSEROLE

    Preheat oven to 425 degrees.

    Grease a 9×13 baking dish.

1 lb. haddock cut widthwise in strips about 2” wide

1 lb. fresh (not cooked) shrimp

    (You may add crabmeat … I don’t)

    1 lb. large scallops

    l tablespoon lemon juice

A little salt & pepper (I use lemon pepper)

About 1/4 cup Italian style bread crumbs

2 or 3 tablespoons melted margarine or butter

Peel the shrimp and spread the scallops, shrimp and haddock on the bottom of the 9×13 dish. Sprinkle with lemon juice and salt & pepper or lemon pepper. Sprinkle bread crumbs over top and drizzle melted butter or margarine over the top. Bake in 425 degree oven for 15-20 minutes.

Considering the price of seafood, this dish is rather costly, but if you like seafood, it makes a wonderful main dish for a special occasion.
